BETA CAROTENE
Beta Carotene (carotenoids) is a powerful antioxidant and carotenoid compound that is responsible for giving fruits and vegetables their orange and red pigments. It is a fat-soluble vitamin stored in the tissues of the body. The body converts beta-carotene into a safe form of vitamin A. Beta carotene is not an essential nutrient, but vitamin A is. Research studies have shown that those that consume at least four servings of beta-carotene rich foods daily may slow cognitive decline and have a much lower risk of developing certain cancers and heart disease. This fact brings to mind the need for moderation. Carrots are root vegetables packed with beta-carotene. Consuming the most nutritious varieties of carrots is a great idea. Consuming too many carrots too often may make you appear orange, seriously! Too much vitamin A in the body can be toxic and may interact negatively with certain medications. Talk to your medical professional before diving into a barrel of carrots! It’s a good approach to eating the following foods with olive oil or nuts to assist the absorption of beta carotene in the body's tissues. The list is following a recommended daily intake of ¾ to 1 cup, and the grams of the vitamin in those servings, provided you don’t overcook! Grow these:
Sweet Potato- 200 grams per cup
Heirloom Carrots: ‘Pusa Asita’ & ‘Pusa Rudhira’ or ‘Kyoto Red’- 200-500 grams per cup!
Butternut Squash- 205 grams per cup
Red Bell Peppers- 130 grams per cup
